After uninstalling what? The fop2admin module or the fop framework? If you uninstall something in FreePBX it should not affect FreePBX itself unless it was not uninstalled correctly for some reason?
After installing fop2admin - and having errors on the server-side installation of fop2 (I installed it on a virtual Ubuntu LAMP server and was not able to log in or even see the login screen) I attempted to uninstall fop2, at which point the aforementioned error appeared in the FreePBX (the latest stable version of Distro) status window and would not allow me to apply config.
I have since re-installed fop2admin and can now apply configs, but I do not want the program on there if possible.

Uninstalling fop2admin should not interfere at all with Freepbx after the uninstallation. If files are removed, there is nothing that could affect FreePBX. So, I have no idea what is wrong in your setup. It is quite simple, if a module is NOT present, it cannot break FreePBX as the module itself is not loaded, there are no files, no hooks, no callbacks, etc. So what you say it does not make any sense to me.
If in doubt, remove the module directory by hand, usually in /var/www/html/admin/modules/fop2admin , just remove the whole directory.
fop2 and fop2admin are non intrusive in its nature. I think you have some other kind of problem.
