I want to record all calls which go thru a certain dialplan (failing that, all calls)
Is there any way to configure fop2 to do this, or do I have to go thru asterisk?

You have to do that through asterisk.

Can those recordings made by asterisk be listened to ion fop2?

You can use post recording scripts to update the fop2recordings table, but the dialplan and the script should be written/created according to your dialplan/versions of everything.
