The strings that are not in the translation file can be found in js/presence.js , they are not in the translation file as the idea is that you can put whatever you like, add new options, or remove some. There are some other things to consider when modifying the text strings in the presence field, basically the freepbx integration. As when you set the phone to DND using *78, the extensions-override macro adds the "Do not disturb" text string to the fop2 state, and that string MUST match with one of your current options. So if you change the Do not disturb to something else, you will also need to tweak the app-dnd macros included in the extensions_override_freepbx file.
